Microstations de lavage du café en milieu de Butembo : défis pour une production de qualité

Cette étude a été conduite dans le but de faire un diagnostic du mode de traitement du café au sein des microstations de lavage tout en identifiant les failles pouvant nuire à la qualité du café. Des enquêtes ont été conduites auprès de 29 microstations de lavage du café (MSL en sigle) regroupées au sein des coopératives Kawa Kabuya, Coopade, Soprocopiv et Kawa Kanzururu. Bien que les coopératives disposent de microstations de lavage du café, la généralisation des bonnes pratiques dans le traitement du café n’est pas effective. Outre l’irrégularité de la qualité des cerises récoltées dans les champs paysans, le triage manuel des cerises est souvent négligé en raison du manque de personnel et des difficultés financières. Les risques de perte de qualité du café sont également élevés pour l’ensemble des MSL en raison des conditions précaires de fermentation, de lavage, de séchage et de stockage du café constatées.
Abstract
The aim of this study was to assess coffee processing methods at micro-washing stations and identify any flaws that could affect coffee quality. Surveys were conducted at 29 micro-washing stations belonging to the Kawa Kabuya, Coopade, Soprocopiv and Kawa Kanzururu cooperatives. Despite having micro coffee washing stations, good coffee processing practices are not widely implemented by the cooperatives. In addition to the inconsistent quality of cherries harvested in farmers' fields, manual cherry sorting is often neglected due to staff shortages and financial difficulties. The risk of coffee quality loss is high for all MSLs due to precarious conditions in the fermentation, washing, drying and storage processes.
